When you get added as a knight, you get a notification in the top right of your notifications, it's easy to just message the model and say "hey I don't want to be your knight, remove me", but I guess if this person has been there for 3 years and if it happens all too much, then I can understand the frustration - I guess this is a good example why there should be an "ACCEPT" or "DECLINE" the "OFFER" to be a knight when a model clicks to make you one.

My friend has never had knights in her room. I asked her if I could be one once, and she replied "I'll have to ask the admins". I dropped it and never pursued it.
Last week I go on her profile to check her weekly schedule, and there is a knight.
Here is our PM conversation about it the next day:

I get your frustration with this but I wouldn't worry. He is paying a lot to be it, and ultimately it's the admin/studio decision, it's all financial, nothing "special" at all, so I would just ignore it and any time you see his name just remember it's not "from choice" like it would be if it were her making you one, it's purely for the tokens and it keeps him coming and tipping her lots more - once he stops, the admins will be removing him.
