I think the biggest appeal for videos (at least custom ones) is that it's something they can watch by their favorite model when she's not around. People don't always buy drinks for others with an agenda. Sometimes it's just a respect or appreciation. I've had drinks bought for me by strangers that never approached me IRL and didn't expect me to. In some cultures it's harmless, especially if the person buying the drinks is drinking themselves. "Bad luck to drink alone" kind of mentality.
In camming it can be the same way. I don't do drinks for tips but If I was drinking at home as a member, I could see the appeal of kind of virtually sharing a drink with someone. It's typically a social vice. Or if your model friend seems tight about something and is admittedly looking for an excuse for a drink or three that they might have had anyway maybe slightly encouraging it is harmless as well.

Videos make sense to me sometimes. I can only speak about MFC, but it is very much set up as a social site, where members are encouraged to feel as though they "know" the model. I charge ~$8/minute for custom requests depending on the difficulty, and so far I've never had any caps anywhere. Not videos, not live shows.
